Freshly made juices are always best, so if you’re unable to do the juicing yourself, consider finding a juice bar. Most bottled juices are pasteurized, which means they have been heat-treated to kill bacteria. Unfortunately, that process may also damage some of the enzymes and phytonutrients in the juice. There is, however, a newer process called HPP (High Pressure Processing). This subjects the juice to very high pressure, which inactivates pathogens while helping to retain the flavors of fresh fruits and vegetables.
